Oil-Free Thousand Island Dressing

It’s amazing how many yummy dressings you can make WITHOUT added oil. Nuts are your friends! In this recipe I use cashew nuts to impart a creamy, silky texture to the dressing. Cashew nuts are my go-to ingredient whenever replacing anything creamy! You’ll be seeing a lot of them on this blog.

Traditionally, Thousand Island is made with pickle relish, which is very salty. I substitute cucumber which adds a lovely freshness to the dish…

Ingredients:

  1. 1 cup raw cashews
  2. 1 cup soy milk (you can use whatever unflavored dairy-free milk you have on hand)
  3. 3 TBS ketchup
  4. 1 tsp dried onion flakes
  5. 1 tsp dill weed
  6. 1/2 cucumber (I usually take some of the skin off), diced

Directions:

Place all ingredients in high-powered blender and blend on high until smooth (see notes).
Stir in diced cucumbers.
Serve over salad or veggies or whatever recipe you have that calls for Thousand Island dressing.

Makes 2 cups.


Helyn’s Notes: If you don’t own a high-powered blender you will need to soak your cashews for a few hours in order to achieve the nice creaminess needed. Don’t be alarmed if they change color, usually a purplish gray, that’s normal and won’t affect the color when you blend them. I highly recommend that you purchase a high-powered blender, such as a VitaMix, if you are without one as soon as you can… it’s really vital with many of these recipes. 🙂
