Vegan Orange Creamsicle Smoothie
Growing up on Long Island, in the summer months I would listen attentively for the familiar sound of the bells on the Good Humor ice cream truck. I was often seduced by the infamous orange Creamsicle! It’s been YEARS since I’ve had one and I had a bag of juicing oranges on hand… smoothie! I’ve seen other creamsicle smoothie recipes online but most of them use ice cream or yogurt and the vegan recipes use tofu or highly processed dairy-free frozen concoctions. So. Here it is. A whole-food, creamy, refreshing cold one!
- 3 cups COLD orange juice (fresh squeezed is best!) — pop it in the freezer for a while if you want an extra cold and thick smoothie.
- 1 cup raw cashews
- ½ – 1 cup ice
- 3 medjool dates
- 1 TBS vanilla extract
- Place cashews in a high powdered blender and add just enough orange juice to cover. Blend until smooth.
- Add the rest of the juice and remaining ingredients and blend again until smooth.
- Garnish with some fresh oranges and orange zest.
Serves 2. Enjoy!
