Wilted Greens + Raspberry Gastrique

Okay, so yesterday was history in the making for me because we harvested and ate our first crop of mustard greens! I was so excited. Eating food that you’ve grown yourself from seed is such an amazing feeling. You plant it, nurture it, water it, talk to it… and then you get to enjoy the most delicious, fresh flavor ever! NOTHING like store-bought. I’ve had other people’s home grown food and it was also wonderful. But when you grow your own, it’s just very special.

To commemorate the occasion I had to make something fun; something worthy of my delicate, happy greens. “Gastrique” is a French culinary word for a sauce that is made with fruit and reduced, usually with vinegar and sugar. The tart raspberry tang was really perfect with the peppery flavor of the mustard greens. I topped with some walnuts for better absorption of the fat-soluble vitamins in the greens and they also added a sweetness and a nice crunch. Serve this dish with some robust buckwheat pasta. Yum.

Ingredients:

       ~ for the gastrique

  • 1 cup fresh or frozen organic raspberries
  • juice of 1/2 lemon
  • 1 tsp date sugar or other minimally processed sweetener (adjust per how sweet your berries are)

       ~ for the greens

  • 2 cups tightly-packed chopped greens (you can use whatever greens you want–doesn’t have to be mustard greens)
  • 5 cloves garlic
  • juice of 1/2 lemon
  • 1/4 cup water
  • 1/3 cup chopped raw walnuts for garnish
Directions:

  1. To make the gastrique, simply place all the ingredients into a small sauce pan and simmer on low to reduce until the mixture thickens a bit. Then strain it, to remove the seeds. Use a nut milk bag to strain if you have one to save time on this step!
  2. Place the greens, water, lemon and garlic into a sauté pan. Cover and and cook on high heat until the greens wilt. It won’t take but a minute or two!
  3. Arrange the gastrique on the plate however you like. Add the greens and nuts.

Serves 2 as an appetizer or side dish. Enjoy!
