Greens Overload Sammich

This is really a kale overload sandwich. But you can use any kind of greens you like… just pile ’em high and chow down. Before I ate a plant-strong diet, I would sometimes make broccoli rabe (a.k.a. rapini) sandwiches. Of course they were loaded with olive oil and salt and I stuffed the healthy greens into some kind of white Italian bread… not exactly the most healthful preparation.

But once in a while you just want a sandwich. I know I do. In the middle of the day, in the middle of production… be it writing, blogging, gardening or working on my cookbook—sometimes I just need something quick and easy.

For these babies, just lightly steam your favorite greens and heap them in between two slices of whole grain bread. I added tomato and onion and made a simple tahini garlic mayo (see recipe below) and it was filling and radically yummy.
