Roasted Red Pepper Hummus and Spinach Wraps

Today’s post will be short and sweet. Looking for a healthy and easy lunch idea? Try these yummy hummus wraps! Sometimes the simplest ingredients are the tastiest. And the combination of flavors in these wraps are just the best.

Ingredients:

  • roasted red pepper hummus (see the recipe here)
  • 4 cups tightly-packed fresh baby spinach
  • 4 cloves garlic, chopped
  • juice of ½ lemon
  • 4 sandwich wraps of your choice (I used brown rice wraps)

Directions:

  1. Make the hummus and set aside.
  2. Steam the spinach with the garlic until the spinach is just wilted (about 3 minutes)
  3. Drizzle with lemon juice and mix well.
  4. Fill the wraps with the hummus and spinach and roll up.
  5. That’s it!

Serves 4.  Enjoy!

  1. Yum! And those pictures are stunning (the views etc)…..lovely autumnal colours……it's heading into summer here although currently spring keeps springing and then hiding in the closet every other day……:)

    This looks good and easy-both things I love! It looks like the mountains are finally starting to turn colors. We have been waiting since it seems to be late this year. By next weekend it should be perfect and a wonderful drive on the Blue Ridge Parkway. Thanks for sharing your recipes and your pictures!
