Tomango Salad

So I saw these GORGEOUS yellow tomatoes at my local produce stand and I just had to have them. I had no idea what I would do with them until I spied a ripe mango in my fridge… Tomatoes and mangos? Yes! These two make a perfect pairing for a unique and super refreshing salad.

Here you go…

Ingredients:

  • 2 yellow tomatoes, cubed
  • 1 large, ripe mago, cubed
  • ¼ cup finely shredded fresh mint or basil (I used cinnamon basil from my garden and it was wonderful)
  • juice of one lime

Directions:

  • Mix all ingredients together and serve!
Makes about 4 cups. Enjoy!
