Low-fat, Vegan, Nut-free, Cheddar Cheeze Sauce!

This sauce is the bomb. The taste is so much like aged cheddar cheese that it blew my mind! No, it does NOT have the same mouth-feel as dairy cheese nor cashew cheese because it’s missing all that fat! But it’s creamy and delicious nonetheless and if you’re watching your fat intake, it’s just perfect. AND it’s a whole food that gives you more veggies! Who can resist?

Ingredients:

  • 1 small head cauliflower (about 4 cups chopped), steamed
  • 1 small red bell pepper, roasted and peeled/seeds removed.
  • Β½ cup unsweetened soy milk
  • ΒΌ cup nutritional yeast
  • 2 tsp mellow white miso (optional, if you’re minimizing your salt intake you can skip it)
  • 1 tsp lemon juice
  • 1 tsp brown mustard
  • 1/8 tsp ground turmeric

Directions:

  1. Blend all ingredients until smooth.
  2. Transfer to a sauce pan and whisk to eliminate the air that got caught in it from blending. Heat until warm. My cauliflower had not cooled off totally when I blended, but I did this step anyway, just to get rid of most of the air bubbles.
  3. Serve over pasta, steamed veggies, anything you like!

Makes about 4 cups. Enjoy!

Healthy trails,

    HI Helyn–

This sounds great! Susan Voisin also has a delicious cheesy sauce made with cauliflower. But I think your addition of the roasted red pepper would but this right over the cheddary-cheese-taste top!! πŸ™‚

Yum! I'm thinking I could add some chopped tomatoes, onions and jalapenos and make some nacho cheese sauce!

  3. Helyn says:

Thanks, Maria! I hope you'll try it! πŸ™‚

It is, Tami! It's actually kinda light and fluffy, too. πŸ™‚

  6. I'm in heaven. I've had Helyn's creamy cheese made with cashews and love by her in her very own home in the North Carolina mountains and I've been craving it ever since (and everything else she makes). This recipe looks so simple. I can hardly wait to make it and scarf it down – the whole thing! (Well, I will have to learn to share :)) Helyn, you never cease to amaze me.

Aww, thanks honey! I miss you!!! xo

Well, heck, Helyn, I think you should have all your readers over for dinner! I'm jealous. πŸ™‚

I made it for dinner tonight and it was amazing! I didn’t have cauliflower but just used 4 c. of the veggies I was making, including some left over cooked potatoes, and poured it over the veggies (asparagus, onions, cucumbers and red peppers) and we ate it like a soup. It was soooo delicious. Thanks.

    Love,

    Helen
