Quick and Easy! Eggnog Chia Pudding ~ Vegan
Merry Christmas Eve, everyone! I am finally done with decorating for the holiday. ONE DAY and it was a whirlwind of Christmas Spirit zooming through my house… we put up about half of what Christmas decor and lights we have and decorated our little tree in record time. The presents are wrapped and all is well.
NOW, to get to tomorrow’s menu! Eek. I’ve never been so ill-prepared for a holiday meal before. But it’s okay! I’m enjoying the challenge. So, I was thinking last night about what I could come up with for dessert tomorrow that is easy and fast. And I’m sure I’m not the only one to think of this idea but I think it’s fabuloso and I’m so excited to share it with you… EGGNOG chia pudding! YES! Last year I created a date-sweetened, cashew-based eggnog for ya’ll (RECIPE HERE!) and that’s what I used. Okay, so you can use store-bought, non-dairy eggnog, saving even more time and effort. but I chose to make my own.

- 2 cups homemade vegan eggnog (see recipe link above)
- 1/4 cup chia seeds
- Mix the eggnog with the chia and set aside until it thickens up a bit.
- Portion into serving vessels and refrigerate until serving time.
- You can certainly make more than this recipe does, which only serves 2. For every 2 cups of eggnog, use 1/4 cup chia seeds. Also, keep in mind, all eggnog is not created equal with regard to thickness! Some are REALLY thick and some are much thinner, so if you're going to use store-bought, adjust the amount of chia seeds to suit the thickness of the eggnog. If it's a thin eggnog, similar to milk, use 1/2 cup chia seeds.
