Raw Mango Salsa

Here is a different take on salsa for you! It’s fresh, sweet and slightly spicy. If you like mangos, you will love this. It’s a perfect accompaniment to some Raw Corn Chips or my Chipotle Copycat Sofritas! There are very few ingredients in here. Mostly it’s mango and tomato.

I purposely did not over-spice so you can still taste the beautiful freshness of the mango. I also used mint, instead of cilantro and I can’t believe how well it worked. It added yet another layer of freshness. This is so quick and easy to make and filled with juicy flavor. I hope you’ll try it!

Sweet & Spicy Raw Mango Salsa

Prep Time: 10 minutes

Yield: about 1 pint

A fresh and delicious twist on salsa!

Ingredients

  • 3 ripe mangos
  • 2 medium-sized Roma tomatoes
  • juice of ½ lime
  • leaves from 1 sprig peppermint, chopped
  • ¼ tsp cumin powder
  • ¼ -½ tsp chili powder, depending on how spicy you like it!
  • 1 tsp coconut nectar or other raw sweetener of your choice

Method

  1. Peel and chop the mangos into about ½" chunks.
  2. Remove the seeds and inner white flesh from the tomatoes and dice, again about ½" size.
  3. Add the remaining ingredients and stir to combine.
  4. That's it!

Notes

If you can't find peppermint, basil would be the next best choice.
