Red, White & Blueberry Frozen Coconut Bars

With just four ingredients, this superb vegan recipe is so, so easy to make and beautiful to look at, too. In fact, it’s so easy, it can barely be called a “recipe.” So if you’re looking for a last minute 4th of July dessert idea, here you go! You can use raspberries or strawberries for the pop of red color. I used raspberries and blueberries and it was truly divine!

Red, White & Blueberry Frozen Coconut Bars

Prep Time: 10 minutes

Yield: 8 bars

Ingredients

  • 14 oz. coconut milk (I used full fat but light would work fine, too)
  • 3-4 TBS sweetener of your choice, depending on the sweetness of your milk and how sweet you prefer it. Also, if your fruit is nice and sweet you can use less.
  • ~ 2 cups fresh fruit of your choice (I used blueberries and raspberries)

Method

  1. Mix the coconut milk and the sweetener together. I used coconut nectar but any minimally processed sweetener will do.
  2. Place the fruits into your popsicle molds, filling about 3/4 of the way to the top.
  3. Pour in the coconut milk.
  4. Freeze for several hours, overnight is best.
  5. Enjoy!

Notes

If your popsicle molds don't come with serving sticks, you can purchase wooden sticks online. If you're using sticks, wait about 1-2 hours before inserting them into the partially frozen treats.
