Oil- free Pumpkin Seed Dressing

Happy Sunday! I’ve had this recipe “in the hopper” for too long and since I overslept this morning and nothing else was available I am now publishing it. I don’t know why I kept procrastinating on publishing this post. Most often I think I need to have something extra special  to post for ya’ll. And I kept thinking, “It’s just a salad dressing.” But it’s not really just a salad dressing. It’s oil-free and nutrient-rich! And I doubt you’d find many like it online. So here you go… today’s post. Simple, delicious… nourishing.

This tasty dressing is rich in minerals and is an especially good plant-based source of zinc. Zinc is responsible for maintaining many important bodily functions including digestion, regulating blood sugar, energy metabolism, and wound healing.

Pumpkin seeds were a celebrated food among many Native American tribes, who treasured them both for their dietary and medicinal properties. In South America, the popularity of pumpkin seeds has been traced at least as far back as the Aztec cultures of 1300-1500 AD.

Mikey made some pumpkin seed butter which I used in this recipe. A bit of work for the old food processor but it turned out great! To make pumpkin seed butter, simply puree raw pumpkin seeds in a food processor… that’s it. No other ingredients. Just make sure you give the machine a break every so often so it doesn’t overheat. If you would rather not make pumpkin seed butter, you can just blend whole pumpkin seeds with the other ingredients.

Ingredients:

  • ¼ cup raw pumpkin seed butter (or ½ cup raw shelled pumpkin seeds)
  • 1 cup unsweetened soy milk or any non-dairy milk
  • 1 TBS mellow white miso
  • juice of ½ lemon
  • 1 tsp Spike salt free seasoning
  • 1 tsp onion powder
  • 1 medjool date, pit removed

Directions:

  • Place all ingredients into a high powered blender and blend until very smooth.

Makes about 1.5 cups. Enjoy!

    This is so delicious! Seriously, all you need is lettuce and maybe a tomato with this dressing, and you will only want salad and more salad.
