Beans ‘n’ Greens Pesto
What a delightful and easy way to get a lot of nutrients! This dish is a snap to put together. Total prep time 10 minutes. If you’re a foodie blogger like me, I’m sure you know that sometimes recipes just don’t come together. I can plan and plot and tweak and fiddle for hours and the end result is just… well, not good. But on the other hand, sometimes I get an idea, whip it up in a flash and it’s a winner. That’s how this recipe came to be… I love it when that happens.
- 1 cup tightly packed chopped kale
- handful fresh basil
- 2 cloves garlic
- 1/4 cup walnuts
- 1 TBS hemp hearts
- juice of 1/2 lime
- 2 cans salt-free garbanzo beans
- Place all the ingredients, except the beans, into a food processor and process until you get a chunky paste. Takes less than a minute.
- Toss with the beans.
