Beans ‘n’ Greens Pesto

What a delightful and easy way to get a lot of nutrients! This dish is a snap to put together. Total prep time 10 minutes. If you’re a foodie blogger like me, I’m sure you know that sometimes recipes just don’t come together. I can plan and plot and tweak and fiddle for hours and the end result is just… well, not good. But on the other hand, sometimes I get an idea, whip it up in a flash and it’s a winner. That’s how this recipe came to be… I love it when that happens.


  • 1 cup tightly packed chopped kale
  • handful fresh basil
  • 2 cloves garlic
  • 1/4 cup walnuts
  • 1 TBS hemp hearts
  • juice of 1/2 lime
  • 2 cans salt-free garbanzo beans
  1. Place all the ingredients, except the beans, into a food processor and process until you get a chunky paste. Takes less than a minute.
  2. Toss with the beans.
This makes a great lunch or side dish. We enjoyed it with some leftover Carrot Cashew Salad and a big bunch of sprouts. I’m thinking about ramping up the ingredient amounts on the pesto and using it on some whole grain pasta! I need to use the basil in my garden… it’s a jungle out there.
