Carrot Cashew Salad
- 2 pounds carrots, shredded
- 1 cup raw cashews
- ¼ cup raisins (I used Hunza raisins but any kind will do)
- ¾ cup fresh orange juice plus ¼ cup raw cashews
- Place the ¼ cup cashews into a high powdered blender and add ¼ cup of the orange juice.
- Blend until smooth.
- Add remaining orange juice and blend again until smooth.
- Mix this with the rest of the ingredients.
Makes about 4 cups. Enjoy!
