Carrot Cashew Salad

Want an easy and fresh side dish for a summer meal? This one has only four ingredients and it’s not only nutritious but naturally sweet and delicious as well!


  • 2 pounds carrots, shredded
  • 1 cup raw cashews
  • ¼ cup raisins (I used Hunza raisins but any kind will do)
  • ¾ cup fresh orange juice plus ¼ cup raw cashews


  1. Place the ¼ cup cashews into a high powdered blender and add ¼ cup of the orange juice. 
  2. Blend until smooth.
  3. Add remaining orange juice and blend again until smooth.
  4. Mix this with the rest of the ingredients.
  5. Serve!

Makes about 4 cups. Enjoy!
