Simple Vanilla Chia Pudding
Simple, simple, simple. Dessert just doesn’t get any easier than this! I keep posting chia pudding recipes. I hope you don’t mind. Because in case you haven’t noticed…
A delightful dessert with minimal ingredients and maximum nutrition!
Ingredients
- 2 cups unsweetened soy milk or other non-dairy milk
- ½ cup white chia seeds (you can use black but white is much prettier 🙂
- 3 TBS pure maple syrup
- 2 tsp pure vanilla extract (or 1 tsp vanilla bean powder)
Method
- Combine all ingredients in a bowl. Stir well.
- Stir every 10 minutes or so until the chia seeds start to gel up.
- When the chia seeds are floating around evenly, refrigerate for a few hours (overnight is best) in whatever serving vessels you will be using.
- Top with fresh fruit (optional)
- Done.

Thanks for another great looking chia pudding. I made the blueberry chia pudding and love it. This will be my next one to try. I notice you have changed the sweetner from dates to maple syrup – is that because the vanilla flavor is better enhanced with the syrup?

I'm so happy you loved the blueberry pudding! One reason I used the maple syrup in this one is because you need less to sweeten and it doesn't change the color of the pudding all that much. The maple flavor, while subtle, is a nice addition, too. Dates would certainly work just as well for this pudding but then you would also need to use the blender and I wanted a really fast, easy dessert. 🙂

Makes perfect sense – thanks. And you're right about the blender. I use the vitamix and the other night I was going to make the blueberry chia pudding but didn't want to clean the blender afterwards. I will definitely try this flavor.
