Southwestern Quinoa Salad

There’s LOTS of flavor in this bowl of nutrition… for a “salad” it could easily satisfy as a main dish. This is such a simple recipe that I won’t make too much of a fuss about it. But I hope you’ll try it and fuss over it yourself! 🙂


  • 4 cups cooked quinoa
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 jalapeño  pepper, minced
  • 2 green onion stalks, chopped
  • 2 cups corn kernels (fresh or frozen and thawed)
  • 1 can no-salt-added black beans, drained and rinsed
  • 2 tsp ground cumin
  • 3 TBS chopped cilantro
  • ½ TBS tamari or other low salt soy sauce (optional)

  • Mix everything together and eat it up!

Serves 4-6. Enjoy!
