Oven-roasted Garlic

Roasting garlic may not be a difficult task, but you’d be surprised how many people don’t quite know how to go about it. There are many ways to roast garlic but I wanted to share with you my favorite roasting technique since roasted garlic mashed potatoes are on so many Thanksgiving menus.

This method is so easy! Here’s what you do…

1. With a sharp knife, cut off the tops of the garlic bulbs so you can see most of the cloves.

2. Dab a tiny bit of olive oil on the tops of the exposed cloves.

3. Place in a baking dish large enough to accommodate however many bulbs you are roasting. 
4. Cover and roast at 400° F for 45 minutes to one hour, until the cloves are soft and bubbly.

5. The next part is the most fun… squeeze the garlic bulb until the cloves pop out of their casings.

How cool and easy is that? It also make a nice presentation which I often use, putting a whole bulb of garlic on each person’s plate. Smiles galore.

    I just learned the other day this was a great idea to use in mashed potatoes, so this is exactly what I needed to see! I know mashed potatoes aren't the most difficult things to make, but may I ask how you make yours for Thanksgiving? Sorry if it's on this site somewhere – I have been looking and didn't see anything yet 🙂 Also, I just discovered your site today (a commenter mentioned it on Healthy Girl's Kitchen) and I have been buried in it for over an hour, your photos and recipes look absolutely AMAZING, and I cannot wait to start making some! I have already changed my mind on a couple things I was going to make for Thanksgiving tomorrow and will be swapping in some of your recipes instead (I know – last minute planning!). Thanks for all your hard work to share your recipes and knowledge with all of us! I will definitely be a regular visitor.

    Hi Rachel! Wow, thanks so much for your feedback! I'm so happy to hear that you will be making use of my recipes! On the mashed potatoes, I don't have a recipe on here because white potatoes aren't recommended in a nutritarian eating plan. But when I do make them, I just cube the potatoes (peel on) into about 2" pieces, boil, drain and then mash with some cashew milk (recipe on this site) and the roasted garlic as well as sometimes a little paprika. Hope this helps and have a very happy Thanksgiving!!!

    Good to know – I was debating doing a sweet potato dish only; however, it was a big step that my husband is totally on board with a 100% plant-based Thanksgiving meal this year, and including the more traditional white mashed potatoes will help keep it an exciting experience for him 🙂 Thanks for quick response and for the tips on how you would make them.
