Smoky White Bean Hummus
Another hummus recipe for you! Hummus is one dish that is SO easy to prepare with such minimal ingredients, that I tend to make it when I’m in a hurry or feeling just plain lazy. Plus, the variations on hummus are seemingly endless. Use whatever kind of beans you like and add your favorite spices!
I had some canned navy beans that I decided to use up while I was waiting for my big order of dried beans from Amazon because… drumroll… I got an Instant Pot for Christmas! Thank you, Santa (that’s my honey). I can’t wait to use it for making beans. I love to cook my own beans but they usually take forever so this handy and somewhat fancy pressure cooker will be most welcome in my kitchen by cutting down the cooking time on my lovely beans. I’ll let you know how I like it when I’ve used it more. So far, I’ve only made quinoa, but guess what? It only took ONE MINUTE. And it was perfectly fluffy.
On to this easy hummus recipe…
- 3 cups cooked, unsalted white beans, drained (2 cans)
- ⅓ cup tahini
- juice of ½ lemon
- 1 clove garlic
- 1 TBS smoked paprika
- 1 tsp chipotle hot sauce
- Place all ingredients into a food processor and blend until smooth.
- Sprinkle with a little extra smoked paprika and enjoy with veggie sticks or whole grain pita chips.
Serves 4. Enjoy!
