Cucumber Canapés with Fresh Melon Salsa

Can you tell I’m into colorful foods lately? We eat with our eyes first and I’ll tell ya, these guys are so pretty I didn’t even want to take a bite. Can we say, “eye candy?” Yes, indeed!

A canapé is a type of hors d’oeuvre, usually a little one-bite, open-faced sandwich (on bread). The word canapé comes from the French word for “couch” using the analogy that the garnish sits atop the bread as people do a couch. I did away with the bread and used cucumbers instead. The result? A super-fresh bite, perfect for a special gathering or any Summer celebration. Bring them to a picnic or barbecue on Memorial Day or the 4th of July. Everyone will oooh and ahhh. 🙂

I may have gone a little overboard with all the photos in this post… I couldn’t help myself!

  • English cucumber, striped and sliced into ½” rounds (use as many or as little as you like)
  • shredded daikon radish — again, depends on how many canapés you want to make. I shredded about ¼ cup radish for one cucumber and it was plenty.

~ for the salsa, mix together:

  • 1 cup diced honeydew melon
  • ½ cup diced watermelon
  • ½ cup diced mango
  • 1 tsp finely chopped mint leaves (I used peppermint) 
  • juice of ½ lime
With this amount of salsa, I had quite a bit left over using only one cucumber. It was wonderful all on its own!

  1. Liking this sweet – ish approach to Cuc canapes…..I make mine with all sorts of savoury toppings but have never thought to do this. Summer time is a way away but I see this in December!!!

Well….until yesterday it had been in the mid 20's (celcius) in a freakishly last ditch effort at summer before winter (officially winter here on 1st June which is Sunday!!) but today it was 18 and raining and I think the rest of the week is similar…..meanwhile our crazy government are trying to deny climate change……yerright!!! I still have my smoothies most of the time at present although may go to some porridge if it gets cool soon as a change. Smoothies are just so quick / easy / healthy / no brainer on the go option for me which is good since I rarely have the luxury of sitting down for breakfast with 2 munchkins!!
