Baked Apple Fritters… Oil-free!

Do you love Fall as much as I do? I think it’s the favorite season of many people. The energizing, crisp air, the changing colors of the leaves and the wonderful array of APPLES. Yes, it’s apple season. Yay! Crispy, crunchy, mouth-watering deliciousness in every healthy bite.

I was never a big donut fan, thankfully. But when I did indulge it was usually in the form of a fritter. Traditionally, apple fritters are deep fried. Ugh. And then coated with glazed sugar. Double ugh. These babies are oil-free and just as delicious. No, they don’t have that outer crunch that deep-fried fritters have. But they are light and moist and perfectly plump. As far as the sugar coating goes… fuh-getta-boutit! That’s not powdered sugar I’m dusting on there. It’s lucuma powder!

Lucuma powder is made from the subtropical fruit of the Pouteria lucuma tree, native to South America. It’s naturally sweet and chock full of nutrients including trace minerals, beta carotene, niacin and iron, and is also rich in protein, antioxidants and fiber.

So throw open your kitchen windows, let those heavenly breezes in, and get these yummy goodies in the oven!


~ dry

  • 1 cup whole wheat flour (or spelt)
  • 1½ cups diced, organic* sweet apples (about 1 large apple, I used Gala)
  • 1 TBS ground flax seeds
  • 1 TBS lucuma powder (optional)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg

~ wet

  • ¾ cup unsweetened plant-based milk (I used soy)
  • ½ cup tightly packed medjool dates, pitted
  • 1 tsp pure vanilla extract
  • 2 tsp lemon juice
  • ½ cup unsweetened, organic* applesauce

~ garnish

  • 1 TBS lucuma powder (optional)
*NOTE: I only use organic apples and apple products, as they are highly sprayed otherwise and laden with residual pesticides.


  1. Preheat oven to 350° F.
  2. Line a baking tray with parchment paper.
  3. Mix all dry ingredients together in a bowl.
  4. Blend all wet ingredients, except the applesauce, until smooth.
  5. Add the wet ingredients, including the applesauce, to the dry ingredients and stir well to combine.
  6. Drop about ¼ heaping cup per fritter onto the baking tray. Don’t worry what they look like. Fritters are supposed to be uneven and rustic looking. I used a large ice cream scoop to portion mine. 
  7. Bake for 15-20 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  8. Let cool slightly and dust with lucuma powder if desired. Serve warm.

Makes 9 fritters. Enjoy!

    Hi Helyn ~ Its snowing outside my kitchen window high up in the Rocky Mountains. I made these this morning to surprise my sleeping husband. They are wonderful. I used whole wheat flour and skipped the lacuma powder since I didn't have any on hand. Even at high altitude, the texture was perfect without any modifications to the recipe.
