Do you know Carla? You should! She’s an amazing blogger, holistic natural health practitioner, activist and a downright smart lady! And she has some pretty amazing recipes on her site, too. This one is so simple, yet so divine. Yes. Simply divine, that’s what it is! I just had to share it with you.

A few weeks ago, I participated in Carla’s Fruit ‘Til Five program. It was fun and I enjoyed lightening my caloric load for a whole week with gobs of nutritious fruits after my winter hibernation with way too much food. If you’re interested, head on over and sign up soon because it will only be available for another month or so. And it’s free! Carla also has oodles of nutritional information available to you on her site, Carla Golden Wellness. I could spend hours there!

Dearest readers, I am insanely busy right now. So I apologize for the gaps in time between posts. Today I was rummaging through my pantry, fridge and freezer. What to make for lunch? Egads, I haven’t gone food shopping in too long. Spotted some baby peas in the freezer. Yes, ma’am! I’ve listed the recipe below but if you’d like to see it in action, head on over to Carla’s YouTube channel for a demo! >>> Watch her recipe video here!

I’m sure you will enjoy it as much as we have. It’s a keeper! Peace.

Healthy trails,

Carla's Hip Pea Power Bowl

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: serves 2

Serving Size: a big bowl!

A delectable way to get lots of nutrition!

  • 1 bag frozen peas
  • 1 avocado, cubed
  • 1 tomato, chopped
  • 1/2 red onion, sliced or chopped
  • 2-4 TBS balsamic vinegar (to taste)
  • 1/4 cup hemp seeds (optional but it adds a good dose of healthy Omeg 3s!)

  1. Steam the peas on the stovetop by adding them to a covered saucepan, on med-low heat, for about 10-15 minutes. Keep an eye on them that they don't get too hot or dried out. You may want to stir them once or twice. Since they're frozen there should be just enough water in there to steam them.
  2. Once the peas are thawed (they don't have to be hot!) remove the pan and transfer to a bowl.
  3. Add the remaining ingredients and toss well.
  4. That's it!

I had some snap peas and mushrooms that I needed to use so I sauteed the mushroom in a little vegetable broth and cooked until dry. I added 2 Tbsp. Coconut Aminos and then added a bag of frozen peas and the fresh snap peas to the mushrooms. A couple minutes before it was done I added 4 minced garlic cloves and sprinkled it with Italian seasoning. It was very good. Thank you for the inspiration…..Jeannie D.
