Emerald Kale Detox Soup ~ Raw

Howdy, beautiful! I won’t lie, I’m really getting into raw right now. Seems I’m craving lighter, fresher fare as we head into summer here in the U.S. This soup is just that… light and super fresh! If you’ve never had a raw soup before, you’re in for a treat. It’s so easy to make; just toss everything into the blender and you’re done. With all of the outside work we’re doing around here these days, I like easy. And the lighter meals really help keep me going throughout the day as we finalize our 2016 garden and sneak in some landscaping along the way. Photos to come!

I’m calling this a detox soup because, if you need it, it will help your body to alkalize and rejuvenate. Of course, it’s delicious, whether you want to detox or not! πŸ™‚

Emerald Kale Detox Soup

Prep Time: 10 minutes

Yield: 2 bowls

A light and fresh green soup for a refreshing spring meal!

Ingredients

  • 4 cups tightly packed kale (I used baby kale which made things even easier--no need to chop!)
  • 1 large cucumber, peeled, de-seeded and chopped
  • 2 cups chopped zucchini
  • 2 green onion stalks, trimmed
  • 1 avocado, halved
  • juice of one lime
  • large handful of fresh parsley

Method

  1. Place all ingredients (except for Β½ of the avo) in a blender and blend until smooth.
  2. Portion and serve, garnishing with the remaining Β½ of avocado and whatever else you like.
  3. Enjoy!

    Hey! Thanks for the recipe, I was looking for a kale smoothie with no fruit no sugar on it without success, but I found this soup, try it as it is, I just added a little bit of water and ice, and it worked for me as a yummy kale smoothie πŸ™‚
